Ingredients

  • 1 medium or 3 small zucchini
  • 3 tablespoons virgin olive oil
  • 4-5 cloves of garlic, finely chopped
  • 2 crushed chili peppers
  • sea ​​salt
  • 2 tablespoons grated parmesan
  • 2 tablespoons sour cream (not necessary)

Cooking guidelines

Wash the zucchini and cut off the tip and stalk. Cut lengthwise into quarters and cut out the middle soft part with the seeds. Grate roughly, salt and let the water drain on the colander for about half an hour. Then rinse under running water and squeeze all liquid well.

Fry the chili peppers and garlic for about 1 minute (be careful not to brown - it would be bitter). Pour the zucchini and fry for 3 minutes, stirring constantly. Transfer to a bowl and stir in the parmesan cheese while still warm. Taste or salt it, and if you want, you can soften it with sour cream.
