Ingredients

  • 6 red grapefruits
  • 2-3 tablespoons of honey
  • 1 small dried chili pepper
  • 60 ml of olive oil
  • 1 and 1/2 tablespoons lemon juice
  • 30g roasted nuts (peeled sunflower)
  • A pinch of salt and freshly ground pepper
  • 200 g of corn on the cob
  • 2-3 red chicory, divided into leaves, sliced
  • 1 red onion, cut into very thin slices
  • 20 g of basil

Cooking guidelines

Cut the segments from five grapefruits and put them on a sieve to drip into a bowl. Squeeze the sixth (you should get about 300 ml of juice). Add honey, chili, salt, pepper to the juice and bring to a boil.

Dampen the flame and weld for about a quarter. Set aside and allow to cool, then beat olive oil, lemon juice.

Fry sunflower seeds with a little salt in a pan. You can use any nuts you want.

Spread the corn, chicory, onion, basil and grapefruit segments in a bowl, pour over the dressing and serve. Ideal for steak.
