Ingredients

  • 4 skinless, boneless chicken breast halves
  • 1/4 cup olive oil
  • 2 cloves garlic, crushed
  • 1/4 cup Italian-seasoned breadcrumbs
  • 1/4 cup Parmesan cheese, grated

Cooking guidelines

Preheat the oven to 425°F/220°C.

Take a small saucepan, pour in the olive oil, sprinkle in the crushed garlic and fry very slowly over low heat for about 1 to 2 minutes. Take a small, shallow bowl and transfer the olive oil and garlic mixture into it. Set aside.

In a separate bowl, blend together the breadcrumbs and Parmesan cheese.

Clean your chicken breasts under running water and pat them dry with a paper towel. Lift the chicken breasts using tongs and dip them into the olive oil and garlic mixture, taking care to coat them evenly. Then coat the chicken breasts in the breadcrumb and Parmesan cheese mixture, making sure they are covered evenly and you haven't left out any spots. Try not to pat the breadcrumbs too hard into the meat, just coat them lightly for a crispier result.

Transfer your coated chicken breasts into a shallow baking dish.

Place the baking dish into the preheated oven and bake for approximately 30 to 35 minutes. Check that the meat is completely cooked through by cutting into the meat. It should no longer be pink in the middle and juices should run clear. You can use an instant-read thermometer to make sure. Insert it into the center of the meat and check the reading - it should read at least 165°F/74°C. Then you are ready to serve!
