Blueberry Muffins

Ingredients

  • BLUEBERRY MUFFINS
  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • CRUMB TOPPING
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup cold butter, cubed
  • 1 1/2 teaspoons ground cinnamon

Cooking guidelines

Preheat your oven to 400°F/200°C.

Grease a muffin tin or line it with muffin cups.

In a large bowl, mix together the flour, sugar, salt and baking powder. In a separate bowl, whisk together the vegetable oil, egg and milk. Pour this mixture into the flour mixture. Carefully fold in the blueberries and mix until the blueberries are spread evenly in the batter but be careful not to over-mix the batter. Fill your muffin cups nearly to the top and leave a little space for your crumb topping.

Now make the crumb topping. In a large bowl, mix together the sugar, flour and cinnamon. Cut the butter into cubes and add it to your dry ingredients. Mix it shortly with your fingers or a fork until you are left with a crumbly consistency. Take care not to over-mix the topping or else it may flatten as the butter softens. Sprinkle the topping over your muffins before baking them.

Place your muffins in your preheated oven and bake them for about 20 to 25 minutes or until they are golden and crunchy on the outside. Leave them to cool on a wire rack and then enjoy.
