Ingredients

  • Soured cream – 100 ml.
  • Vanilla extract – 3 teaspoons.
  • Lemon zest – Taken from one large lemon.
  • Large eggs – 4 nos.
  • Golden caster sugar – 75 grams.
  • Full-flat cream cheese – 600 grams.
  • Butter – 25 grams. (Melted)
  • Shortbread biscuit – 200 grams.

  • Light muscovado sugar – 100 grams.
  • Blackberry – 300 grams.
  • Plums – 8 nos. (They must be halved and stone-removed and you also have to cut them into wedges.

Cooking guidelines

Oven should be heated to 320 Degree Fahrenheit/280 Degrees Fahrenheit fan/has 2.

Take a springform tin (22-cm round) and the bottom of this tin has to be lined with baking parchment.

Biscuits have to be placed in the food processor and whizzed to make fine crumbs. Then, they need to be tipped into a bowl and the melted butter should be added and mixed well.

The biscuits have to be pressed into the cake tin base before putting them into the fridge.

Sugar and cream cheese should be beaten together using an electric hand whisk to make smooth. Vanilla extract, lemon zest and eggs (one at a time) must be added and mixed well.

The mixture needs to be poured over the chilled biscuit base and baked by placing in the middle part of oven for 50 minutes.

Set aside and cool for 10 minutes. Then, take it out from the tin and cool completely.

Oven must be heated to 390 Degree Fahrenheit/350 Degree Fahrenheit fan/gas 6.

Sugar, blackberries and plums have to be added to a large roasting tin and tossed well before baking in the oven for 10 to 12 minutes. You can stop when the sauce becomes syrupy and fruits collapsed. Then, you have to take out from the oven and set aside to cool.

The soured cream should be spooned over the top of the cooled cheesecake and it must be spread in a thin layer.

Wedges can be served by topping them with blackberries and baked plums. Some can be used on the side as well.
