Banana Crumb Muffins


Muffins are such an easy to make, yet always heart-warming treat to enjoy for breakfast or as a snack anytime you like during the day. These are particularly rich as their main ingredient is bananas. The key to getting these muffins luxuriously sweet is to use very ripe bananas. You'll know they are the perfect ripeness if they are a deep yellow color and have brown spots all over their peel. Ingredients

  • BANANA MUFFIN BATTER
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 very ripe bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • CINNAMON TOPPING
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon cold butter

Cooking guidelines

Preheat the oven to 375°F/190°C.

Lightly grease a muffin tin made for 10 muffin cups or line it with muffin papers.

In a large bowl, mix together thoroughly all the dry ingredients by hand - the flour, baking soda, baking powder and salt. Melt the butter in a small saucepan over medium-low or medium heat, taking care not to let it brown. Take a fresh bowl and cream the bananas, sugar, egg and melted butter together gently. Pour the banana mixture into the flour mixture and stir together until moistened, making sure not to over-stir the mixture. Divide the muffin batter equally into the muffin tin or muffin cups that you have prepared.

Now it is time to make the topping for your muffins. In a small bowl, mix together the brown sugar, flour and cinnamon. Cut the cold butter into small pieces and add to the mixture - it is important for the butter to be cold in order to get your topping to be deliciously chunky and crumbly. Mix shortly with your fingertips until your mixture looks a bit like coarse cornmeal. Take care not to over-mix or knead the topping or else the heat from your hands will soften the butter too much and cause the topping to flatten. Sprinkle the topping from a height over your muffins.

Bake your muffins in a preheated oven for 18 to 20 minutes. Test that they are done by inserting a wooden toothpick into the center of one of the muffins. If it comes out clean, your muffins are ready to be cooled and enjoyed!
