Sift your flour and baking soda, mix them together in a large bowl and set the dry ingredients aside.
In a separate large bowl, cream together the butter, brown sugar and white sugar. Beat in the instant pudding mix until well blended. Stir in the eggs one at a time and the vanilla extract. Mix in the flour mixture by hand. Finish by stirring in the chocolate chips and nuts until they are evenly blended into the cookie dough.
Take a spoon and make little balls of dough with it. Drop them onto an ungreased, lined baking sheet and press down on them lightly with your fingers.
Bake your cookies for 10 to 12 minutes in the preheated oven until you see that the edges have turned golden brown. Avoid baking them for longer otherwise they will lose their soft chewiness. Take a heat-proof spatula to remove the cookies from the baking sheet and let them cool on a wire rack - if you can wait that long before tasting them!
