Pumpkin season starts and you have to try this popular sweet dessert. Cupcakes are a great addition to family celebrations and parties. You will see that you will fall in love with them....
200 g peeled and coarsely grated pumpkin (hokkaido or butter)
100 g sultana raisins, rinsed
grated bark of 1 bio-orange
2 teaspoons ground cinnamon
200 g of plain flour
1.5 teaspoons of baking powder
1 teaspoon baking soda
For serving:
200 g fresh cream cheese (Lučina, Buko or Philadelphia)
85g powdered sugar
Cooking guidelines
Preheat the oven to 180 ° C and line out the 12 muffin molds with paper baskets. Pour the oil into a bowl, add sugar, eggs and vanilla and beat everything. Stir in grated pumpkin, sultanas and orange peel. Sprinkle with cinnamon, flour sifted with baking powder and soda and mix gently. Divide the dough with a spoon to 3/4 of the height of the molds and bake for about 25 minutes, until a maximum of one or two moist crumbs stick to the stick. Allow to cool on the grill.
It is best to beat the cheese and sugar with an electric beater. Decorate the cupcakes with the cream.
Try this great tip. Dry-roasted and coarsely chopped pecans or walnuts will stand out nicely on the top of cream.
