Ingredients

  • 4 large ripe tomatoes, sliced 1/4 inch thick
  • 1 pound fresh mozzarella cheese, sliced 1/4 inch thick
  • 1/3 cup fresh basil leaves
  • 3 tablespoons extra virgin olive oil
  • sea salt (to taste)
  • freshly ground black pepper (to taste)

Cooking guidelines

Cut your tomatoes and mozzarella cheese into 1/4 inch thick slices. Prepare your fresh basil leaves - they will taste best and be most aromatic if you pinch them carefully straight off the plant to avoid any bruising to the leaves.

Arrange the slices on a large serving platter, alternating tomato slices, mozzarella cheese slices and basil leaves. Drizzle generously with high quality olive oil and season to perfection with sea salt and freshly ground pepper. Feel free to get creative and lightly sprinkle any remaining basil leaves over the top to achieve a graceful presentation.
