Ingredients

  • #Learn about the ingredients needed to make this salad
  • For the quinoa#
  • Quinoa- 1 cup. (You can use a combination of red and white).
  • Salt – 1/2 teaspoon.
  • Chopped fresh cilantro – 1 4 cup.
  • Water – 2cups.
  • Lime juice – 2 tablespoons
  • #For chicken#
  • Sea salt – 2 teaspoons.
  • Large chicken breasts – 2 nos.
  • Ghee or coconut oil – 1 tablespoon.
  • #For Bacon#
  • Thickly cut bacon – 2 pieces
  • #For the sweet potatoes #
  • Large sweet potato – 1 no. (It should be washed and you have to cut both ends off).
  • Coconut oil or residual bacon oil – 1 tablespoon.
  • #Other ingredients#
  • Plain Greek yogurt – 5 tablespoons.
  • Chopped fresh cilantro – 1/2 cup.
  • Chopped lettuce – 3 cups.
  • Shredded cheese – 3/ 4 cup.

Cooking guidelines

Take a medium sized pot.

Quinoa, salt and water should be added to the pot.

Bring to a boil

The heat should be kept at medium level.

When it started boiling, you have to cover and cook for 20 to 25 minutes.

You have to stop when the quinoa becomes fluffy and soft.

Set aside to cool’

Then, the lime juice, lime zest and 1/4 cup of cilantro should be added.

Stir well to distribute the ingredients in an even manner.

For chicken

The chicken breasts should be dried using paper towels.

Season with salt.

Pour 1 tablespoon of coconut oil in a skillet.

When the oil becomes hot, chicken breasts should be added.

The breasts must be cooked for 4 minutes on each side.

Take out the breasts onto a cutting board.

Then, you have to cut the chicken into small chunks.

For the bacon

If you plan to add bacon to your salad, you need t cook 2 slices.

The cooking process should be stopped when it turns crispy.1 tablespoon of bacon can be reserved for the potatoes.For the sweet potatoesCut the potato into small chunks1 tablespoon of coconut oil or bacon fat should be heated in a large skillet over medium heat.The potato cubes must be added when oil become hot.The potato cubes should be seared on all sides for 3 to 5 minutes.Stir well during this process.Stop when potatoes cubes turn brown on the outside.The heat should be reduced to medium low.The skillet needs to be covered with a lid.
