Ingredients

  • 3 eggs + 2 extra yolks
  • 1 teaspoon vanilla extract
  • 150 g semolina sugar
  • 500 ml whipping cream
  • strawberries for decoration
  • For strawberry puree:
  • 750 g strawberries, stalked
  • 2 tablespoons powdered sugar

Cooking guidelines

Finely mix strawberries with sugar on strawberry puree and set aside.

Put eggs, yolks, vanilla extract and sugar in a metal or glass bowl. Place it over a pot of boiling water. Beat for 6-8 minutes until the mixture strains and thickens.

Remove and beat for another 6-8 minutes, or until cool. Carefully stir in the whipped cream.

Pour into a 2 liter metal container. Divide the prepared strawberry puree on top and create a marble effect by gently swirling a spatula or flat knife. Put in the freezer for six hours or overnight. Garnish with sliced strawberries when serving.
