2 cups milk (divided into 1 1/2 cup and 1/2 cup portions)
1/3 cup white sugar
1/4 teaspoon salt
1 egg, beaten
2/3 cup golden raisins
1 tablespoon butter
1/2 teaspoon vanilla extract
Cooking guidelines
Take a small saucepan and bring the water to a boil. Stir in the rice. Reduce the heat to low, cover the saucepan with a lid and allow the rice to simmer for 20 minutes.
Once your rice is cooked, take a fresh saucepan and combine in it the cooked rice, 1 1/2 cups of milk, the sugar and salt. Let the rice mixture cook over medium heat, stirring regularly until you get a thick and creamy consistency. That should take about 15 to 20 minutes. Meanwhile beat your egg until it becomes uniform in color. Stir the remaining 1/2 cup of milk into the rice mixture, whisk in the beaten egg and pour in the raisins. Allow the rice mixture to cook for 2 more minutes and be sure to stir constantly to avoid any lumps from forming.
Remove the rice mixture from the heat and stir in the butter and vanilla to flavor. Serve immediately.
