In Belgium is cookie butter traditionally made from caramel biscuits. These shortbread and crunchy biscuits are flavored with brown sugar and spices such as cinnamon, nutmeg, ginger, cloves or cardamom. The spreadable form of classic biscuits has a characteristic caramelized flavor with a similar structure to peanut butter.

Ingredients

  • 22 dkg caramel lotus cookies
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1/2 cup powdered brown sugar

Cooking guidelines

Place the cookies in a plastic zippered bag, bleed the air and seal the bag. Lightly grind the biscuits into coarse granules using a roller.

Put the crushed biscuits in a food processor equipped with a blade or in a blender and mix until the biscuits are ground to a fine powder.

While mixing, start adding vegetable oil slowly. Then slowly add water. Continue mixing until a smooth paste is formed.
