Ingredients

  • 1 teaspoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 3/4 cup quinoa
  • 1 1/2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • salt and freshly ground black pepper, to taste
  • 1 cup frozen corn kernels
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1/2 cup fresh cilantro, chopped

Cooking guidelines

Take a larger saucepan, pour in the vegetable oil and heat it up over medium heat. Finely chop your onion and garlic cloves, place them in the saucepan and fry until they turn a lightly brown color, taking care to stir regularly for about 10 minutes.

Sprinkle the quinoa into the cooked onion mixture and pour over the vegetable broth. Season with ground cumin, cayenne pepper, salt and pepper. Bring the mixture to a boil. Turn the heat down, cover the saucepan with a lid and let the mixture simmer until all of the broth gets absorbed by the quinoa, which should turn tender and fluffy. That should take about 20 minutes.

Finally, stir the frozen corn kernels into your quinoa mixture and let it all simmer for another 5 minutes, allowing your corn to thaw yet retain its juiciness. Mix in the black beans. Chop your cilantro leaves and sprinkle them into the saucepan. Give the mixture a final stir and serve.
