Ingredients

  • 1 kg pork tenderloin
  • 3/4 cup red port wine
  • 1 tablespoon olive oil
  • 1/2 cup compote cherries
  • 1 teaspoon dried garlic
  • oil spray
  • 1 teaspoon chopped fresh thyme
  • green sprigs of thyme for decoration
  • salt
  • ground black pepper

Cooking guidelines

Preheat the oven to 200 degrees. Bring port wine to a boil in a small higher pan. Cook it slowly for about 10 minutes, until it boils a little and there are 2 tablespoons left in the pan. Then we add compote cherries to it, cook them for less than a minute and remove the pan from the plate. Add chopped thyme to hot cherries. In a special bowl, mix pepper, salt and garlic powder.

Spread the whole pork tenderloin with this seasoning mixture. Heat the oil in a large pan and fry the meat on it for about 8 minutes until brown. Spray the large baking pan with oil spray, place the meat in it and bake it in a preheated oven for about 20 minutes. After this time, rub half the cherry marinade with port meat and bake for another 5 minutes. Then remove the roasting pan with the meat from the oven, smear the remaining marinade with port and let it stand for 10 minutes. Now cut the finished meat into slices and garnish with sprigs of thyme.
