Sprinkle the brown sugar over the bottom of your greased loaf pan and press it firmly. Spoon the ketchup evenly over the sugar.
In a mixing bowl, mix together the ground beef, eggs, onion and ginger. Crumble in the saltine cracker crumbs and pour over the milk. Season with salt and freshly ground pepper. Mix everything thoroughly and shape your meat mixture into a loaf. Carefully lay it in your loaf pan.
Place your meatloaf in the preheated oven and bake for about 1 hour or until juices run clear when pierced and the surface turns crisp and golden.
