Ingredients

  • Pancakes:
  • 120 g ricotta
  • 150 ml milk
  • 3 eggs (yolks and egg whites separately)
  • 130 g flour (spelled)
  • 1 teaspoon of powder to pastries
  • 2 tablespoons cane sugar a pinch of lemon peel
  • pinch of salt
  • renneted butter
  • To complete:
  • 200 g of semi-fat cottage cheese
  • 3-4 tablespoons kefir or white yogurt
  • 2 teaspoons chicory syrup
  • fresh fruit

Cooking guidelines

In a bowl, mix the ricotta, milk and egg yolks and mix thoroughly.

In the second bowl, mix the sifted flour with baking powder and lemon peel and mix with the ricotta mixture.

In the robot, whip the proteins with salt, when they start to whiten, add sugar and whisk solid snow, which we lightly mix into the mixture on the pancakes. A beautiful fluffy dough is made.

Put a little renneted butter on a hot pan on the pancakes (you can also take it completely omit) and spoon shape the pancakes. Toast until golden on both sides.

In a bowl, mix cottage cheese, kefir (or yogurt) and chicory syrup. Cash Garnish the pancakes with cottage cheese and fresh fruit.
