Ingredients

  • Diced cold butter – 140 grams.
  • Egg yolk – 1 no.
  • Plain four – 225 grams. (You can keep extra for dusting).
  • Icing sugar – 1 teaspoon.

  • Eggs – 5 nos.
  • Fresh potatoes – 250 grams. (You have peel, cook and halve them).
  • Milk – 100 ml.
  • Sliced spring onions – 2 bunches.
  • Double cream – 200 ml.
  • Montgomery cheddar – 250 grams. (It should be diced).

Cooking guidelines

The butter needs to be added. You must rub well to make it look like breadcrumbs. The icing sugar should be stirred in. You have to stir in 3 tablespoons of cold water and egg yolk as well.

Then, you need to bring them together to create a firm dough.

The next step is to wrap properly in cling film. Keep it in the fridge for 20 minutes.

Then, you must heat the oven to 200C/fan 180C/gas 6.

The pastry needs to be rolled out on a lightly floured surface.

The next step is to line a deep 23cm tart tin. It should be covered with baking parchment.

Then, fill with baking beans. It should be cooked for 20 minutes.

Now, you can remove the beans and paper.

Again, you have to cook for another 5 to 10 minutes until the tart case becomes sandy in texture and pale.

Remove from the heat. The heat of the oven should be reduced to 160C/fan 140C/gas 2.
