Pour the milk into a medium sized bowl. Trickle the white vinegar into the milk, mix with a spoon and let the mixture stand at room temperature for about 5 minutes. During this time, your mixture should "sour" and thicken nicely.
Sift your flour and combine it thoroughly in a large mixing bowl with the sugar, baking powder, baking soda and salt, and set aside for a moment while you finish your soured milk mixture.
In a small saucepan, melt the butter over medium-low or medium heat, taking care not to let it brown. Whisk the melted butter and egg into your soured milk.
Pour the flour mixture into your soured milk mixture and whisk it all together until all the lumps disappear and you are left with a smooth, thick batter.
Take a large non-stick pan, coat it with cooking spray and heat it on the stove over medium heat. Once the oil is hot, pour 1/4 cupfuls of batter onto the pan and cook for a few minutes until they become firm and golden from the bottom, and little bubbles appear on the surface. Flip your pancakes carefully using a spatula and cook until the other side also turns golden brown. Garnish and serve them immediately.
