Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 2 cups torn green dandelions or arugula
  • 2 green onions or 1 medium leek (white part only), thin slices
  • 2 large hard-boiled eggs, sliced
  • 1/2 cup grapefruit or tangerine
  • Dandelion flowers, optional

Cooking guidelines

Beat the oil and lemon juice in a small bowl. In a large bowl, mix the green dandelion and onion.

Cut the eggs into marigolds and place over green dandelion or arugula. Pour over the dressing and finally add the crescents of grapefruit. You can sprinkle flowers from dandelions.
