Ingredients

  • #Rosemary blackberry compote#
  • Juniper berries – 4 nos. (If you do not get juniper, you can use bay leaves).
  • Fresh rosemary sprig – 1 no.
  • Black peppercorns – 3 nos. (If you do not get whole peppercorns, you can use good grinds of black pepper).
  • Sugar – 2 tablespoons.
  • Freshly squeezed lemon juice- 1 tablespoon.
  • Pint blackberries – 1no.
  • Buckwheat honey – 1-1/2 tablespoons.
  • #Baked Feta#
  • Olive oil – 2 teaspoons.
  • 8-ounce rectangle of feta – 1 no. (It should be pat dried).

Cooking guidelines

First of all, you need to tie up rosemary sprig, juniper berries and peppercorns in a single layer of cheesecloth. (It is being done to make the fishing process easy when compote has finished cooking.

The next step is to take a small sauce pan.

All ingredients including cheese cloth should be placed in the saucepan over medium heat.

Bring to a simmer.

You need to ensure that the cheesecloth is nestled under the blackberries.

Heat must be lowered to medium low when the mixture starts to simmer and blackberries start to give up the juice.

Simmer for 20 to 25 minutes. (You have to make sure that until the blackberries breaking up and a syrup consistency is achieved.

You have to stop with approximately 1 cup of compote.

The compote can be used immediately.

You need to fish out the cheesecloth.

You can refrigerate for a few hours or overnight to allow flavors to set up.

Oven must be preheated to 400 Degrees Fahrenheit.

The oven rack should be placed in the upper third.

Feta has to be coated with olive oil.

Then, it needs to be placed in a small oven proof baking dish.

Bake feta for 8 minutes and you have to stop when it turns soft.

Now, you must switch to broiler setting.

The cheese should be broiled until the top starts browning. (The time will be around 3 minutes).Take out from the oven.Spoon over the preferred amount of warm blackberry compote.
