Ingredients

  • You need:
  • 1 kg pork neck
  • salt
  • BBQ sauce:
  • 2 tablespoons oil
  • 1 larger onion
  • 2 cloves of garlic
  • 2 tablespoons ketchup
  • 1 teaspoon smoked peppers
  • 1 teaspoon (non-crushed) ground chipotle peppers
  • 1/2 ground coriander
  • 1 tablespoon worchester
  • 1 tablespoon quality (Japanese) soy sauce
  • 2 tablespoons cane sugar
  • 1 teaspoon salt
  • 50 ml of cider
  • 150 ml of water (you can just put only cider, 200 ml)

Cooking guidelines

It's better to start preparing the meat the day before, because it takes a long time to bake until it disintegrates. Cut the meat on the surface into a grid, place in a baking dish and salt on all sides. Choose the baking tray best, it would be rather taller and narrower, just for meat.

To prepare BBQ sauce, fry the finely chopped onion in oil until glassy. Then add the sliced ​​garlic and sauté for a maximum of one minute. Add ketchup, smoked peppers, chipotle and coriander and stir constantly, so the mixture doesn't burn. Add sugar, salt, worchester and soy sauce and mix again. Then pour cider over the mixture and let the alcohol evaporate a bit. Finally, pour in water and let it boil for 15-20 minutes, the sauce will shrink and thicken a little. Allow to cool.

Rub the finished sauce into the meat, cover the meat a little with water and cover the baking dish. Bake at 130 ° C and bake for about 6 - 7 hours. After two hours of roasting, check that the meat does not need to be minced. You can recognize the finished meat by the fact that when you insert a fork into it, it will disintegrate on its own.

Serve with any side dish (any mash, mashed potatoes, pastries, grilled vegetables ..) as a main course, or with various dips, vegetables and pastries, ideally on a cutting board as part of an appetizer party menu or fill burgers, sandwiches or toast with shredded meat.
