Ingredients

  • Pork flank:
  • 2 kg pork loin with bone
  • 1 tbsp sage leaves, finely chopped
  • 4 cloves garlic
  • sea ​​salt and freshly ground black pepper
  • potatoes and leafy vegetables as a side dish
  • Plum sauce:
  • 1 pc large sour apple, peeled, peeled and sliced ​​
  • 350 g pitted plums
  • 10 pcs sage leaves, finely chopped
  • 225 g dried apricots
  • 185 g semolina sugar
  • 150 ml white wine vinegar
  • 1 pc red chili pepper, seeded and sliced ​​

Cooking guidelines

Preheat the oven to 220 ° C. Dry the meat with a paper towel and cut the skin into the grid. Rub salt and pepper into the notches. Grind the sage with garlic in a mortar and spread the mixture on the pork side. Bake the meat for 30 minutes, then reduce the temperature to 180 ° C and bake for another 1 hour.

In the meantime, prepare the sauce. Boil the apple in six tablespoons of water, it will take about 10 minutes. Then add the other ingredients. Cook over low heat until the sauce thickens. It will take at least 45 minutes. Taste the sauce, and if it is a little sweet, sweeten it.

Coat the pork with about 2 tablespoons of the sauce and bake for another 30 minutes. The skin should be crispy and the flesh tender.

Serve with the remaining sauce (cold or heated, as desired), potatoes and leafy vegetables.
