Ingredients

  • Corn flakes – 2 cups.
  • Vanilla extract – 1 tablespoon.
  • Large eggs – 3 nos.
  • Granulated water – 1/3 cup.
  • Dark brown sugar (Packed) – 1 1/2 cups.
  • Baking powder – 1 1/2 teaspoons.
  • Kosher salt – 1 3/4 teaspoons.
  • All purpose flour – 1 1/2 cup.
  • Cornmeal (Fine grind) – 1/2 cup. (You can keep some more for pan)
  • Unsalted butter – 1 1/2 cups. (More can be kept for pan)
  • Large ears of corn – 5 nos. (They need to be husked and kernels cut from cobs)

Cooking guidelines

A rack needs to be placed in the middle of the oven and the oven must be preheated to 475 Degrees Fahrenheit.

A rimmed baking sheet has to be lined using foil and corn kernels have to be spread out on baking sheet. They need to be roasted for 20 minutes and tossed halfway through. You can stop when dried in a slight way and edges turned brown.

Set aside to cool down before transferring to a food processor to pulse. You have to make sure that they are finely chopped.

One and half cups butter must be cooked in a saucepan for 8 to 10 minutes and the heat needs to be kept at medium level. Keep on stirring while cooking and butter need to be formed as well they must get browned)

The brown butter has to be placed on a large bowl and set aside to cool.

The oven temperature should be lowered to 375 Degrees Fahrenheit. A baking pan (13/9-inches) must be buttered and dusted with cornmeal. In a bowl, half cup cornmeal, baking powder, salt and flour should be whisked.

Granulated sugar and brown butter need to be added to brown butter. They have to be beaten using an electric mixer for one minute to incorporate sugar. Vanilla and eggs must be added and beaten again for four minutes on high speed. Make sure that the mixture is light and creamy. It is a very important step to make a thick cake.

After educing the speed to low, corn has to be added and beaten enough to ensure an even distribution. Dry ingredients have to be added and beaten and sides and bottom of the bowl need to be scraped to combine all ingredients properly.

The batter has to be scraped into the pan that is prepared and corn flakes have to be scattered over batter.

It should be baked for 35 to 45 minutes. You need to make sure that the corn flakes are toasted in a light manner and tester inserted in the center area can be taken out in a clean way.
