Get into summer holiday mood and tackle this easy recipe for marinated grilled shrimp! No matter where you are, just imagine you are relaxing by the sea enjoying a light evening meal of fresh seafood....
Take a large bowl and stir in it the minced garlic, olive oil, tomato sauce and red wine vinegar until all of the ingredients are blended well into one another. Season the mixture with fresh basil, salt and cayenne pepper. Once again, give the mixture a good stir. Add the shrimp to the bowl and toss them in the marinade until the shrimp are evenly coated. Cover the bowl with plastic wrap, place it in the refrigerator and let the shrimp cool for between 30 minutes and 1 hour, stirring the mixture once or twice during that time.
Light a grill at medium heat.
Thread the shrimp onto skewers, piercing once near the tail and once near the head. If you decide to use wooden skewers, take care to soak them in water before using them to keep them from getting charred on the grill. You can discard the remaining marinade.
Lightly oil the grill grate and place the skewers on it. Let the shrimp cook for 2 to 3 minutes on each side. You will know that your shrimp are fully cooked through when they turn opaque and slightly pink on the outside.
