Ingredients

  • Pork Belly:
  • 1500 g pork belly
  • 1 piece of fresh ginger
  • 3 cloves of garlic
  • 1 chili pepper
  • 8 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • Jasmine rice
  • Salad:
  • White radish
  • Coriander
  • Lime
  • Cucumber

Cooking guidelines

Cut the pork belly into longer pieces about 5 cm wide and cut the skin into a grid and prepare marinade.

Peel a piece of ginger with a spoon and grate it into a bowl, add crushed garlic, a piece of chili pepper, soy, fish sauce and lime juice. Mix all the ingredients well and put the pork belly into the marinade. It is ideal to marinate good meat overnight, but one hour is enough.

Put the meat together with the marinade in a hot oven at 180 ° C and bake with the lid closed for about an hour and a half. Then remove the lid and add a little water if necessary. Raise the temperature to 200 ° C and bake for about half an hour until the skin is beautifully crispy.

Prepare a salad while the meat is being roasted. Cut all the ingredients into very thin strips. Put into a bowl and drizzle with lime, salt as needed and cover with chopped coriander.

Serve with jasmine rice and salad.
