Mix milk, cream, a pinch of salt and eggs. Beat through the flour gradually until a thin batter is formed, which slowly drains from the whisk.
Use a potato peeler to make long thin slices of zucchini. Heat the non-stick pan and spread it with butter. Spread a few zucchini slices on it and fry until soft. Pour two tablespoons of pancake dough and fry until golden on each side for about half a minute to a minute. Move to a plate and keep hot. Prepare more pancakes from the remaining ingredients.
Mix mascarpone, dill and lemon juice well for the sauce, salt to taste. When serving, add a little sauce to each pancake and garnish with pieces of smoked salmon.
