Very fast and hearty salad. Prepare a Japanese Poke salad at home. Contains fine tofu and onions marinated in a delicious ginger-soy sauce and paired with rice, red cabbage, cucumber and avocado!...
2 cloves garlic, broken and finely chopped or finely grated
1 slice of ginger, peeled and finely chopped or grated
Sweet onions such as julienned onions
14 blocks of organic tofu (solid or extra strong), diced ½ inches
Filling the bowl:
½ cucumbers, sliced
3 - 4 radishes, sliced
¼ red cabbage, crushed
1 avocado, diced or sliced
1 tablespoon sesame seeds, roasted or black
2 spring onions, white and green parts, thin slices
⅓ cup of coriander, coarsely chopped
1 ½ cup cooked rice (brown, black or coriander lime rice) or quinoa
Cooking guidelines
Prepare tofu first. Dry the tofu and lay it on its side, cut in half along the longitudinal side. Place on a clean cloth or between paper towels and gently press so that the wipes absorb moisture. Cut the tofu into 0.5 inch wide cubes.
Marinating: In a medium bowl or shallow bowl, mix soy sauce, sambal, sesame oil, garlic, ginger and sweet onion. Throw tofu and let it rest for 10 minutes.
Prepare the remaining ingredients and stack them in a bowl in order. Rice then rice up chopped carrots, mangoes, pineapple cubes and the rest of the ingredients.
