Ingredients

  • Fresh mint (Minced) – 1/2 teaspoon. (Optional)
  • Fresh basil (Minced) – 2 teaspoons.
  • Raspberry spreadable fruit - 2 tablespoons. (They need to be seedless)
  • Fresh raspberries – 1 cup.
  • Ground ginger – 1/2 teaspoon.
  • Garlic clove – 1 no. (Minced)
  • Reduced-sodium soy sauce – 2 tablespoons.
  • Canola oil – 1 tablespoon.
  • Pork tenderloin – 1. (The quantity needs to be 1 pound)

Cooking guidelines

Tenderloin should be cut crosswise into eight slices.

Each slice has to be pounded using a meat mallet and you can stop when each one achieves 1/2-inch thickness.

After taking a large skillet, olive oil should be heated while keeping the heat at medium-high level.

Pork has to be added and cooked for 3 to 4 minutes on each side. (You can check with a thermometer to ensure that temperature reaches 145 Degree Celsius)

After removing from the pan, it should be kept warm.

Heat must be reduced to medium-low.

Then, ginger, garlic and soy sauce have to be added to the pan.

You have to keep on stirring for loosening the browned bits from the pan bottom.

Basil, spreadable fruit and raspberries have to be added and you can also add mint if desired.

They should be cooked for 2 to 3 minutes and make sure that it is thickened in a slight way.

It needs to be served with pork.
