Ingredients

  • Olive oil – 2 tablespoons.
  • Skinless, chicken thighs (bone in) – 8 nos.
  • Garlic – 2 whole heads.
  • Prosciutto or other dry-cured ham – 8 slices.
  • Dry white wine – 175 ml.
  • Tomatoes – 800 grams.
  • Basil – large bunch
  • Cannellini beans or other white beans – 400 gram can. (They should be rinsed and drained as well).
  • Salt and freshly ground pepper – to taste.

Cooking guidelines

First of all, pepper and salt should be used to season the chicken thighs.

Take of eight sprigs from the basil and they should be laid on top of each chicken thigh.

Each thigh needs to be wrapped in a piece of ham. You must make sure that ends remain tucked underneath.

Oven should be heated to 160C 140C fan/gas 3

Oil has to be heated in a large roasting tin and chicken must be added and fried for around 4 minutes. You must ensure that the chicken turns lightly golden and ham crisped.

You should turn it and repeat the procedure.

The garlic bulbs should be cut in half around the middle and tomatoes need to be halved as well.

The remaining leaves from the basil must be picked up and when the chicken turns brown on both sides, tomatoes, wine and half of the basil should be added.

Season first and then, cover with foil before slowly cooking in the oven for 40 minutes.

You need to remove it from the oven and the heat of the oven must be increased to 220C 200C fan/gas 7.

The foil has to be removed from the pan and beans should be stirred into the tomato mixture.

Return to oven and cook for 30 minutes uncovered. (The most important thing is that you check chicken and garlic turning crisp around the edges and tender.

The remaining basil must be torn roughly and it should be scattered over the pan.
