Ingredients

  • Ricotta – 4 ounces.
  • Fregola – 1 1/4 cups.
  • Fresh mint (Chopped) – 2 tablespoons. (You can keep some for serving)
  • Kosher salt – to taste.
  • Olive oil - 2 tablespoons. (Some more can be kept for serving)
  • Bacon - 2 ounces. (You need to chop it)
  • Medium sized onion (Chopped) - 1 no.
  • Dry white wine – 1 cup.
  • Chicken broth (Low-sodium) – 2 1/2 cups.
  • Black pepper (Freshly ground) – to taste.
  • Fresh peas (Shelled) – 1 cup. (You can use frozen peas instead and it should be thawed)

Cooking guidelines

Fregola needs to be cooked in a big pot that contains salted water (boiling) for a period between six to eight minutes.

Pasta needs to be drained and you have to keep one cup pasta cooking liquid separate.

Two tablespoons oil should be heated in a big skillet and the heat has to be kept over medium level.

Bacon has to be cooked for 5 minutes and you must stir frequently. (The cooking process can be stopped when the edges of the bacon turn brown)

Onion has to be added and cooked again for 5 minutes while stirring in an occasional manner. (You have to stop when the onion turns translucent and bacon becomes crisp)

Wine has to be added.

It should be brought to a simmer and cooked for 5 minutes. (You can stop when the skillet becomes almost dry)

Broth must be added and brought to a simmer.

Then, Fregola has to be added and cooked for 5 minutes. (You must stir in a frequent manner and stop when broth gets thickened)

Pepper and salt have to be used to season.

Mint and peas need to be added and cooked while keep on stirring for 2 minutes. (The cooking process can be discontinued when the peas are warmed through)

For bringing the consistency you need, pour the desired amount of pasta cooking liquid.

It can be served with toppings like cracked pepper, mint and ricotta and oil can be drizzled as well.
