Easy Homemade Ramen

Ingredients

  • For soup:
  • 800 g pork belly, shoulder straps and ribs
  • 2 tablespoons ghee
  • 1 onion
  • 4 garlic cloves
  • 2 cm ginger root, sliced
  • (piece of kelp combos, 8 cm)
  • 6 shiitake mushrooms
  • 3-4 spring onions
  • a handful of imperial peas
  • 2-3 pak choi, cut in half lengthwise and larger in quarters
  • 4 eggs
  • 200 g buckwheat soba noodles
  • 4 tablespoons soy sauce
  • 1 tablespoon fish sauce, or to taste
  • 1 tablespoon sesame oil
  • 2 tablespoons of mirin (sweet Japanese rice wine)
  • 1 tablespoon of lime juice
  • Serving:
  • fresh coriander
  • sesame seeds
  • soybean sprouts

Cooking guidelines

In a larger pot on a hot ghee, fry the meat from all sides in order to fry nicely. Pour over 1 liter of hot water, add halved onion, 4 cloves of garlic, thin ginger root sliced, kelp comb and bring to a boil. Then withdraw the power and slowly pull for a few hours, but still 8. Meanwhile, boil heavily salted water for soba noodles. Cook them as instructed on the package to make them aldente. And also cook 4 eggs. Immerse the cold eggs from the fridge in boiling water and cook gently for 7 minutes to make them soft. After cooking, cool them in cold water.

Flavor the broth. When the noodles are ready, divide them into bowls. Put vegetables, mushrooms, meat that you removed from the broth and cut into slices, peeled eggs cut in half and pour everything into the broth. Serve with fresh coriander, sprouts and sesame seeds.
