Ingredients

  • Olive oil – 1 tablespoon
  • Sliced leek or onion – 1 no.
  • Turmeric – 1 tablespoon.
  • Chicken stock or hot fish – 1 l
  • Chopped chorizo sausage – 110 gram pack.
  • Frozen seafood mix – 400 grams. (It should be defrosted)
  • Frozen pea – 200 grams.
  • Long grain rice – 300 grams.

Cooking guidelines

First of all, you need to heat the oil in a deep frying pan.

The next step is to soften the leek for 5 minutes. (You need to make sure that the leek is not browned).

Chorizo should be added.

It should be fried until the oil is released.

Then, turmeric should be added.

Now, you can add rice.

Stir well until the oil forms a coating.

Then, you have to pour in the stock.

Bring to the boil.

Simmer for 15 minutes.

You have to stir occasionally during this period.

Tip in the peas.

It should be cooked for 5 minutes.

Stir in the seafood to heat through for a final 1-2 minutes cooking. (The key is to make sure that the rice is cooked)

Season to taste.
