Melt the butter and chopped chocolate in a water bath. Then add the semolina and vanilla sugar and whisk the eggs into the mixture.
In another bowl, mix the flour, baking powder and salt and gradually add them to the chocolate mixture, stirring constantly.
Work the ingredients into a smooth dough and refrigerate for at least an hour. Preheat the oven to 180°C and line a baking tray with baking paper.
Shape the dough into balls, roll them in sifted icing sugar and place them at intervals on the baking sheet.
Bake the crincles for 8 - 12 minutes until the crust is cracked but slightly firm. Once cooled, the surface of the pastry will firm up a little more and the inside will remain soft.
