Ingredients

  • 250 ml milk
  • 1 egg yolk
  • 20 g coarse flour
  • 10 g cornstarch
  • 40 g butter
  • 1 teaspoon mustard
  • salt
  • vinegar
  • a little sugar
  • a pinch of ground pepper

Cooking guidelines

Pour water into a medium saucepan and bring it to a boil.

Pour the milk into a smaller saucepan and whisk in the egg yolk, flour, starch meal, salt, vinegar, softened butter, mustard, sugar and pepper.

Place the saucepan in a saucepan of boiling water and cook the mixture, stirring constantly, until it reaches a simmer.

Once the mayonnaise has thickened, turn off the stove, stir for a few more minutes and serve.
