Ingredients

  • Olive oil – 3 tablespoons.
  • 3-ounce chicken cutlets – 8 nos.
  • Chopped fresh rosemary leaves – 1 teaspoon.
  • Tomato sauce – 1 1/2 cups. (Recommend Marinara sauce; recipe follows)
  • Chopped fresh thyme leaves – 1 teaspoon.
  • Shredded mozzarella – 1/2 cup.
  • Fresh Italian parsley leaves – 1 teaspoon. (It should be chopped)
  • Grated parmesan – 16 teaspoons.
  • Black pepper – to taste. (freshly ground)
  • Salt – to taste.
  • Unsalted butter – 2 tablespoons. (It should be cut into pieces)
  • #Simple Tomato sauce#
  • Extra virgin olive oil – 1/2 cup.
  • Sea salt – to taste.
  • Black pepper – to taste. (freshly ground)
  • Chopped small onion – 1 no.
  • Crushed tomatoes – 2 nos. (32-ounce cans)
  • Chopped garlic cloves – 2 nos.
  • Fresh basil leaves – 4 to 6 nos.
  • Chopped celery stalk – 1 no.
  • Dried bay leaves – 2 nos.
  • Chopped carrot – 1 no.
  • Unsalted butter – 4 tablespoons (Optional).

Cooking guidelines

Take a small bowl and stir in the herbs and oil into the bowl to blend.

Pepper and salt should be used to season.

Take herb oil and brush both sides of the cutlet.

A large heavy oven proof skillet should be placed over high heat.

Cutlets have to be added and cook for 2 minutes per side. (You must stop when the cutlets turn brown).

Take the skillet out of the heat.

You should spoon the marinara sauce over and around the cutlets.

1 teaspoon mozzarella and 2 teaspoons Parmesan need to be sprinkled over each cutlet.

Butter pieces must also be sprinkled and baked for 3 to 5 minutes. (You must stop when the cheese melts and chicken is cooked through). .

Now, a big casserole pot should be taken and oil should be heated in a medium to high heat.

Garlic and onion have to be added and sauteed for 2 minutes. (Stop when they become translucent and soft).

Carrots and celery should be added and slat and pepper nust be used to season.

Saute around 5 minutes and stop when vegetables turn soft.

Add bay leaves, basil, tomatoes and simmer covered for 1 hour at low heat. (Stop when it gets thicker).

Bay leaves must be removed and seasoning needs to be checked. (1 tablespoon of unsalted butter should be added balance the flavours if sauce tastes acidic).

Now, a food processor should be taken and then, add half of the tomato sauce and it should be processed until turned smooth.

You have to continue with the remaining tomato sauce.

Cool completely and you need to pour one to two cup into plastic bags. (It can be kept in the freezer around 6 months)
