Ingredients

  • Dry breadcrumbs – 1/4 cup.
  • Grated onion – 1/4 cup.
  • Purchased tzatziki – 1/2 cup.
  • Ground cumin – 1 teaspoon.
  • Kosher salt – 5/8 teaspoon. (It should be divided).
  • Chopped fresh mint – 5 tablespoons. (It should be divided).
  • Black pepper – 3/8 teaspoon (Divided).
  • Ground chicken – 1 pound.
  • Zucchini – 4 nos. (They should be halved lengthwise).
  • Ground red pepper – 1/8 teaspoon.
  • Olive oil – 4 teaspoons. (Divided).
  • Cooking spray.

Cooking guidelines

Take a bowl. Then, you need to combine breadcrumbs, cumin, 1/4 cup of tzatziki, onion, 3 tablespoons mint, 1/2 teaspoon salt, red pepper and 1/4 teaspoon black pepper in the bowl.

The next step is stirring with a whisk.

Then, the chicken should be added.

Then, you need to mix using your hands. The chicken mixture should be shaped into 8 patties.
