Ingredients

  • 300 g butter at room temperature
  • 290 g of brown sugar or other healthy sweetener
  • 4 large eggs
  • 2 tablespoons vanilla extract
  • 400 g semi-coarse flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon powder
  • 240 g whole flax seeds

Cooking guidelines

Instead of flaxseed, you can use other seeds, cereals or dried fruits that you like.

Preheat the oven to 180 C. Using a hand-held electric mixer, mix the butter with brown sugar in a medium bowl until the mixture is light and fluffy. Then add one at a time and vanilla.

In the second bowl, mix the flour, soda, salt and cinnamon. Combine the flour mixture with the butter mixture. Add the flax seeds and mix well.

Line the baking sheet with parchment paper and use spoons to start placing the dough on the baking sheet in the form of biscuits. Leave a distance of approx. 2.5 cm between the individual biscuits.

Bake the biscuits for about 15 minutes. Let them cool on the plate for 5 minutes and then remove them on the cooling rack.

The cookies stay fresh for about two weeks in an airtight container.
