Ingredients

  • 2 kg pork ribs
  • 1 tablespoon smoked pepper
  • 1 teaspoon granulated onion
  • salt, pepper
  • BBQ sauce:
  • 1 small onion
  • 2 cloves of garlic
  • 6 tablespoons ketchup
  • 1 tablespoon cane sugar
  • 1 tablespoon smoked peppers
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons rapeseed oil
  • Salt and pepper

Cooking guidelines

In a bowl, mix the smoked peppers and onions. Cut the ribs into smaller pieces, add salt, pepper and season each. Finally, put the ribs in a bowl, wrap them over the food foil and let it rest until the next day.

Line the deeper plate with baking paper, place the ribs on it and cover with foil. Bake in an oven preheated to 160 ° C for about 2 hours until the ribs are soft.

Finely chop the onion and garlic, heat the oil in a pan and fry them. Add ketchup, sugar, peppers, vinegar and worcester, salt and pepper to taste, then cook over low heat for about 20 minutes to blend the flavors. If the liquid evaporates too quickly, cover the sauce with a little water or broth. Fine-tune with salt, sugar, vinegar or Worcester. It's up to you.

Brush the almost finished ribs with BBQ sauce and place on the grill. Bake for about 15-20 minutes to form a crust. Serve with the remaining sauce and pastry
