Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 medium onion, finely grated
  • 1/2 cup fresh parsley, finely chopped
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground allspice
  • 1 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 6 skewers, wooden or metal

Cooking guidelines

Light a grill outside and let it heat up to high heat. Meanwhile, get your skewers ready. If you choose to use wooden skewers, be sure to soak them in water to keep them from getting charred later. In the meantime, prepare the rest of your ingredients.

Take a large bowl and mix together the ground beef, onion, parsley, cayenne pepper and allspice until everything is beautifully blended together. Season with salt and pepper. Divide your meat mixture into 6 equal portions and shape the meat around each skewer, pressing firmly until the meat sits about an inch thick along a length of about 6 inches, reminding you of the shape of a log.

Grill your Kofta kebabs for 10 to 15 minutes, making sure to turn them once in a while to get them golden and crispy on the outside. Before serving, check that your meat is cooked through completely and no longer pink on the inside.
