Ingredients

  • 4-6 pieces of cod fillet
  • 5 cloves of garlic, peeled and extruded
  • ¼ cup chopped fresh parsley
  • Lemon juice:
  • 5 tablespoons fresh lemon juice
  • 5 tablespoons extra virgin olive oil
  • 2 tablespoons melted butter
  • For wrapping:
  • ⅓ cup of universal flour
  • 1 teaspoon ground coriander
  • ¾ teaspoons sweet peppers
  • teaspoons of ground cumin
  • ¾ teaspoons of salt
  • ½ teaspoons of black pepper

Cooking guidelines

Preheat the oven to 400 ° C. In a bowl, mix the lemon juice, olive oil and melted butter and set aside.

In another bowl, mix the flour, spices, salt and pepper. Place next to a bowl of lemon juice.

Prepare fish fillets and dip the fish in a mixture of lemon juice and then wrap in flour. Shake off excess flour. Keep the lemon juice mixture for later.

Heat 2 tablespoons of olive oil on an iron skillet over medium heat. Add the fish and fry them on each side for about a minute, but be careful not to fry the fish for too long.

Add ground garlic to the remaining lemon juice mixture and mix. Prepare a baking dish and put the fish fillet in it and pour the lemon juice.

Bake in a preheated oven for about 10 minutes, until the meat begins to peel easily. Remove from the heat and sprinkle with chopped parsley. Serve immediately, for example with jasmine rice or mashed potatoes.
